We have a lot of birthdays coming up next month so we did a birthday themed date. We had fun making a Funfetti cake. We divided the cake down the middle and each decorated a half of the cake. We also reminisced about past cakes from our childhood and from our time together.
We also went shopping for birthday presents for the coming birthdays in our family.
Here is a recipe for a fabulous cake. One of our favorites. Enjoy!
1 white cake mix 1 ½ cups flour
5 eggs 1 cup sugar
2/3 cup cooking oil 1 teaspoon vanilla
1 teaspoon baking powder 1 cup milk
2 cans evaporated milk 2 cans sweet and condensed milk
1 pint whipping cream
1 pint whipping cream 3-6 tablespoons sugar
2 teaspoons vanilla
Mix cake ingredients together and place in a rectangular cake pan (a dripper pan is better). Make sure you greased your pan. Bake at 350 degrees for 45-50 minutes until knife inserted in middle comes out clean. Allow to cool for 20 minutes.
Mix together filling ingredients and refrigerate while the cake is baking and cooling. When the cake is cooled fill with the filling. You can poke holes in the cake or use a flavor injector. (I usually poke with a drinking straw like the strip it rich cakes.) The cake is better if you let it sit in the refrigerator 1-2 days soaking up the filling.
Hours before serving or before your guests arrive whip cream until it forms peaks. Add the other ingredients and continue to whip. Frost the cake with the whipped cream and decorate as desired.
